This is a very savory and very moist pork that is so good on sandwiches or rolled up in tortillas with all your favorite additives. Enjoy

Ingredients
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 3 small pork tenderloins
  • 1 white onion thinly sliced
  • 1/2 teaspoon ground cumin
  • 1 cup chopped canned tomatoes
  • 1 clove garlic crushed
  • 1 teaspoon dried oregano
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped fresh parsley leaves
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Preheat oven to 375.
  2. Heat butter and oil in a large skillet over medium high heat until hot.
  3. Add pork and brown quickly on all sides then transfer to roasting pan and bake 30 minutes.
  4. Place onion and cumin in same skillet and cook slowly over very low heat about 10 minutes.
  5. Add tomatoes, garlic, oregano, green onions, parsley then season with salt and pepper.
  6. Bring sauce to a boil then reduce the heat and cook uncovered for 20 minutes.
  7. Remove pork from oven and set aside to cool.
  8. When cold shred or slice thinly then add to sauce and reheat thoroughly before serving.
