Shredded Pork

- 1 tablespoon butter shopping list
- 1 tablespoon vegetable oil shopping list
- 3 small pork tenderloins shopping list
- 1 white onion thinly sliced shopping list
- 1/2 teaspoon ground cumin shopping list
- 1 cup chopped canned tomatoes shopping list
- 1 clove garlic crushed shopping list
- 1 teaspoon dried oregano shopping list
- 2 tablespoons chopped green onions shopping list
- 2 tablespoons chopped fresh parsley leaves shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
How to make it
- Preheat oven to 375.
- Heat butter and oil in a large skillet over medium high heat until hot.
- Add pork and brown quickly on all sides then transfer to roasting pan and bake 30 minutes.
- Place onion and cumin in same skillet and cook slowly over very low heat about 10 minutes.
- Add tomatoes, garlic, oregano, green onions, parsley then season with salt and pepper.
- Bring sauce to a boil then reduce the heat and cook uncovered for 20 minutes.
- Remove pork from oven and set aside to cool.
- When cold shred or slice thinly then add to sauce and reheat thoroughly before serving.
