Spicy Dried Bean Patties - Falafel

- 375 g (1/2 lb) fava beans, soaked over night shopping list
- 375 g (1/2 lb) chick peas, soaked overnight shopping list
- 2 cloves of garlic, crushed shopping list
- 1 large brown onion, finely chopped shopping list
- 4 green onion, finely chopped shopping list
- 1/2 hot red pepper or green pepper, finely chopped shopping list
- 1 level tbls bicarbonate of soda shopping list
- 3 tbls plain flour shopping list
- 1 cup finely chopped parsley shopping list
- 1 tsp ground coriander shopping list
- 1 - 1 1/2 tsp cumin shopping list
- 1 1/2 tbls salt shopping list
- 1/2 tps black pepper shopping list
- oil for frying shopping list
How to make it
- Drain beans and chick peas well in cold water.
- Pound or grind the beans and chick peas (if grinding, put them through the fine blade of the mincer twice).
- Mix in crushed garlic, chopped onions, green onions, and hot pepper, then add the remaining ingredients.
- Pound or blend the mixture to a smooth paste and let set for 1 hour.
- Take walnut-sized lumps of the mixture and mould into round flat shapes 4 cm (1 1/2 in.) in doameter. Allow to rest for a further 15 minutes, then deep fry them in oil until golden brown.
- Serve hot accompanied by a tomato and cucumber salad and tahini Sauce.
- Variation:
- Roll in round shapes of mixture in sesame seeds before frying.
