No Bake Chocolate Peanut Butter Oatmeal Bars

A no bake bar recipe I got out of a martha stewart magazine, recipe says it will make 2 dozen but I cut the bars a little smaller and got almost double that
Ingredients
- vegetable cooking spray shopping list
- 9 oz finely ground chocolate wafers (2 cups) I used 8 of the oreo hundred calorie packs shopping list
- 1 1/2 cups old fashioned oats shopping list
- 1 1/4 cups powdered sugar shopping list
- 1/4 tsp course salt shopping list
- 5 oz unsalted butter (1 stick plus 2 tbsp) shopping list
- 1 cup chunky peanut butter shopping list
- 3/4 cup plus 3 tbsp smooth peanut butter shopping list
- 10 oz semi sweet chocolate, melted shopping list
- 1 1/2 oz milk chocolate, melted (i used 1 regular hershey bar) shopping list
How to make it
- Spray a 9X13 pan with cooking spray, then line with parchment paper for easy bar removal/cleanup leaving over hang around the edges of the pan (i just used aluminum foil)
- Combine wafers, oats, sugar, and salt in large bowl
- Melt butter in sauce pan over medium heat, then add crunchy peanut butter and 3/4 cup smooth peanut butter. Stir until creamy and combined
- Add peanut butter mixture to wafer mixture and stir until well mixed
- Transfer mixture to baking dish and press down so it is fairly even
- Refrigerate for 30 minutes
- Pour semi sweet chocolate over chilled mixture and spread so that it creates a thin even layer.
- Refrigerate until hardened, about 30 minutes
- Heat 3 tbsp smooth peanut butter in sauce pan until runny, drizzy over chilled chocolate
- Melt 1 1/2 oz milk chocolate and drizzle over top of peanut butter
- Refrigerate about 30 minutes
- Lift block of bars out of pan using parchment paper or foil
- Cut into bars of desired size
