Nice zucchini side dish with tomatoes and parmesan.

Ingredients
  • 1/2 to 1 tsp. minced garlic
  • 1Tbs olive oil
  • 4 med. zucchini,cut in 1/4" slices
  • 1 can(14-1/2oz0 italian diced tomatoes,undrained
  • 1 tsp seasoned salt
  • 1/4tsp pepper
  • 1/4c grated parmesan cheese

Directions
  1. In a lg. skllet,saute garlic in oil. Add zucchini;cook and stir for 4-5 mins.or till crisp-tender
  2. Stir in tomatoes,seasoned salt and pepper. Simmer,uncovered for 9-10 mins. or til liquid is absorbed and mixture is heated through. Sprinkle with parmesan cheese.

Good afternoon, I know what it is like to have zucchini that overgrows the garden and try to find new ideas for a new "Zucchini Surprise". If you can serve it for 5 days of the week and not fix the same thing....That is a surprise. You have my 5 on this one. Have a very good day...
