How to make it

  • Chop tomato, basil, cilantro, garlic, and onion
  • Drain tuna
  • Mix chopped ingredients and tuna in bowl.
  • Add seasonings, including mayo and mustard, to taste. Amounts are NOT exact. Just go with what tastes right to you.
  • Take whole loaf of Focaccia and cut in half (for one big sandwich). Then cut down middle and each side into fourths. This will create the 8 sandwiches.
  • Spread Sundried Tomato oil on the inside of each sandwich.
  • Spread tuna mixture on bottom half of each sandwich.
  • Top tuna with fresh spinach and top portion of bread.
  • Drizzle top of each sandwich lightly with the Sundried Tomato oil.
  • I used a George Foreman grill for the next step, but if you have a Panini maker, that will do fine as well.
  • After turning on and allowing time for the grill to heat: Spray grill lightly with cooking spray, so that sandwiches will be more easily removed.
  • Place sandwiches on the grill (as many as will fit at a time) and close. Cook for approximately 5 minutes or until top has crisp, golden color and texture.
  • Remove from grill. Repeat as necesarry.
  • Cut each sandwich in half. Each half = 1 serving.
  • Serving suggestions:
  • Sides: cold sliced cucumbers, steam asparagus, tomato slices, iced tea or lemonade.
