Tuna Paninis Recipe
An Italian twist on a tuna sandwich that'll make your mouth water.

Ingredients
  • Focaccia - 1 loaf
  • Tunafish - 1 package
  • Fresh Basil - chopped, to taste
  • Fresh Cilantro - chopped, to taste
  • Roma Tomato - 1, chopped
  • Onion - 1 small, chopped
  • Fresh garlic - 1 clove
  • Sundried Tomato oil (can be found at Wal-Mart and Kroger)
  • Fresh Spinach
  • Light Mayo - to taste, chef's choice
  • Mustard - to taste, chef's choice
  • Lemon Juice - tsp
  • Thyme - tsp
  • Pepper - tsp
  • Seasoning Salt - tsp

Directions
  1. Chop tomato, basil, cilantro, garlic, and onion
  2. Drain tuna
  3. Mix chopped ingredients and tuna in bowl.
  4. Add seasonings, including mayo and mustard, to taste. Amounts are NOT exact. Just go with what tastes right to you.
  5. Take whole loaf of Focaccia and cut in half (for one big sandwich). Then cut down middle and each side into fourths. This will create the 8 sandwiches.
  6. Spread Sundried Tomato oil on the inside of each sandwich.
  7. Spread tuna mixture on bottom half of each sandwich.
  8. Top tuna with fresh spinach and top portion of bread.
  9. Drizzle top of each sandwich lightly with the Sundried Tomato oil.
  10. I used a George Foreman grill for the next step, but if you have a Panini maker, that will do fine as well.
  11. After turning on and allowing time for the grill to heat: Spray grill lightly with cooking spray, so that sandwiches will be more easily removed.
  12. Place sandwiches on the grill (as many as will fit at a time) and close. Cook for approximately 5 minutes or until top has crisp, golden color and texture.
  13. Remove from grill. Repeat as necesarry.
  14. Cut each sandwich in half. Each half = 1 serving.
  15. Serving suggestions:
  16. Sides: cold sliced cucumbers, steam asparagus, tomato slices, iced tea or lemonade.
