Tuna Paninis

- Focaccia - 1 loaf shopping list
- Tunafish - 1 package shopping list
- fresh basil - chopped, to taste shopping list
- Fresh cilantro - chopped, to taste shopping list
- roma tomato - 1, chopped shopping list
- onion - 1 small, chopped shopping list
- fresh garlic - 1 clove shopping list
- Sundried Tomato oil (can be found at Wal-Mart and Kroger) shopping list
- fresh spinach shopping list
- Light Mayo - to taste, chef's choice shopping list
- mustard - to taste, chef's choice shopping list
- lemon juice - tsp shopping list
- thyme - tsp shopping list
- pepper - tsp shopping list
- seasoning salt - tsp shopping list
How to make it
- Chop tomato, basil, cilantro, garlic, and onion
- Drain tuna
- Mix chopped ingredients and tuna in bowl.
- Add seasonings, including mayo and mustard, to taste. Amounts are NOT exact. Just go with what tastes right to you.
- Take whole loaf of Focaccia and cut in half (for one big sandwich). Then cut down middle and each side into fourths. This will create the 8 sandwiches.
- Spread Sundried Tomato oil on the inside of each sandwich.
- Spread tuna mixture on bottom half of each sandwich.
- Top tuna with fresh spinach and top portion of bread.
- Drizzle top of each sandwich lightly with the Sundried Tomato oil.
- I used a George Foreman grill for the next step, but if you have a Panini maker, that will do fine as well.
- After turning on and allowing time for the grill to heat: Spray grill lightly with cooking spray, so that sandwiches will be more easily removed.
- Place sandwiches on the grill (as many as will fit at a time) and close. Cook for approximately 5 minutes or until top has crisp, golden color and texture.
- Remove from grill. Repeat as necesarry.
- Cut each sandwich in half. Each half = 1 serving.
- Serving suggestions:
- Sides: cold sliced cucumbers, steam asparagus, tomato slices, iced tea or lemonade.
