I found this online and tweeked it. This is such a tasty combination of great things! It is fresh and served best cold. You can't stop scooping! I serve with Stacy's Pita Chips, but it is good with tortillas too.

Ingredients
  • 1 mango- peeled, and diced
  • 1 avocado- peeled, pitted and diced
  • 4 medium tomatoes- diced (handfuls of colorful fruit tomatoes would be good too)
  • 1 jalapeno pepper- seeded and minced
  • 1/8 cup chopped fresh cilantro- optional
  • 3 large cloves of garlic- minced
  • 1 teaspoon salt
  • 1/2 lime- squeezed (about 2 tablespoons)
  • 1/4 cup chopped red onion
  • 2 tablespoons olive oil

Directions
  1. In a medium bowl combine mango, avocado, tomatoes, jalapeno, cilantro, and garlic
  2. Stir together well
  3. Add salt, lime juice, and olive oil
  4. Stir
  5. To best blend the flavors, refrigerate for at least 30 minutes before serving
