Herbed Chicken Recipe

Ingredients

Two 1 ½ to 2 ½ lb chickens, split in half (Swiss Chalet-style)

2/3 cup olive oil

2 tbsp chopped parsley

1 tsp salt

1 tsp seasoned salt

½ tsp marjoram

½ tsp paprika

½ tsp lemon pepper

¼ tsp tarragon

Directions

Place the chicken in a shallow pan.

Mix remaining ingredients and pour over the chicken.

Let it stand for two hours, turning occasionally.

Drain off the marinade and reserve it…..

Place chicken skin-side down on the broiler pan (no rack) ---

Broil 7” from the element for about 25 minutes, basting occasionally.

Turn the chicken and broil 15 to 20 minutes longer.

When the thick part of the drumstick cuts easily and there’s no pink showing, the chickens are done.
