Herbed Chicken

- Two 1 ½ to 2 ½ lb chickens, split in half (Swiss Chalet-style) shopping list
- 2/3 cup olive oil shopping list
- 2 tbsp chopped parsley shopping list
- 1 tsp salt shopping list
- 1 tsp seasoned salt shopping list
- ½ tsp marjoram shopping list
- ½ tsp paprika shopping list
- ½ tsp lemon pepper shopping list
- ¼ tsp tarragon shopping list
How to make it
- Place the chicken in a shallow pan.
- Mix remaining ingredients and pour over the chicken.
- Let it stand for two hours, turning occasionally.
- Drain off the marinade and reserve it…..
- Place chicken skin-side down on the broiler pan (no rack) ---
- Broil 7” from the element for about 25 minutes, basting occasionally.
- Turn the chicken and broil 15 to 20 minutes longer.
- When the thick part of the drumstick cuts easily and there’s no pink showing, the chickens are done.
