Ingredients

How to make it

  • Peel and quarter potatoes and put in cold water
  • Bring to a boil and boil until fork tender (about 15 minutes)
  • drain
  • put potatoes back in pot and add palmful kosher salt
  • add cream cheese and a (wooden spoonful or so) of margarine
  • mix until blended
  • add about 1/2 - 2/3 cup milk (start with small amounts and add more as needed for creamy texture)
  • mash
  • add pepper to taste
  • ***Also great to add 1/2 cup fresh grated parmesan!

    I had to stop by to say the potatoes are delicious! I had them for supper tonight and we had no left overs. I think my 14 yr. old grandson ate half of them and he never knew they were low fat! Thanks!
