Creamy Low Fat Mashed Potatoes

- 4 large baking potatoes shopping list
- kosher salt shopping list
- 1/2 block of 1/3 less fat cream cheese shopping list
- spoonful light margarine (I use Smart Balance Lt. with EVOO added) shopping list
- Fat Free milk shopping list
- pepper shopping list
How to make it
- Peel and quarter potatoes and put in cold water
- Bring to a boil and boil until fork tender (about 15 minutes)
- drain
- put potatoes back in pot and add palmful kosher salt
- add cream cheese and a (wooden spoonful or so) of margarine
- mix until blended
- add about 1/2 - 2/3 cup milk (start with small amounts and add more as needed for creamy texture)
- mash
- add pepper to taste
- ***Also great to add 1/2 cup fresh grated parmesan!

I had to stop by to say the potatoes are delicious! I had them for supper tonight and we had no left overs. I think my 14 yr. old grandson ate half of them and he never knew they were low fat! Thanks!
