Chili Mushroom Caps

- 4 slices bacon, cooked shopping list
- 24 medium sized mushrooms shopping list
- 1 tablespoon butter shopping list
- 1/4 cup finely chopped onion shopping list
- 1 clove garlic, finely chopped shopping list
- 1/3 cup finely chopped sweet red pepper shopping list
- 2 to 3 pickled jalapeno peppers, seeded and finely chopped shopping list
- 1/2 cup shredded cheddar cheese shopping list
- 1/4 cup chopped fresh parsley shopping list
How to make it
- Cook bacon in skillet until almost crisp; remove and chop; drain fat from skillet.
- Remove stems from mushrooms; finely chop 2/3 of stems.
- Cook mushroom caps in boiling water 1 minute; drain; rinse under cold water; drain on paper towel.
- Heat butter in skillet; add chopped mushrooms, onion, garlic; cook for 5 minutes.
- Add red pepper and jalapeno; cook 3 more minutes; cool.
- Stir in bacon, cheese and parsley.
- Spoon mixture into mushroom caps; Place on baking sheet,
- Bake in preheated 350 degree oven for 10 minutes.
