Apricot Cream Coffee Cake

- coffee cake shopping list
- 1 3/4 cups flour shopping list
- 1/2 cup sugar shopping list
- 3/4 cup butter, softened shopping list
- 2 eggs shopping list
- 1/2 teasp. baking powder shopping list
- 1/2 teasp. baking soda shopping list
- 1/4 teasp. salt shopping list
- 1 teasp. vanilla shopping list
- ............................................. shopping list
- FILLING shopping list
- 1/4 cup sugar shopping list
- 1 8-ounce package cream cheese, softened shopping list
- 1 egg shopping list
- 1 teasp. finely grated lemon peel shopping list
- 1 10-ounce jar apricot preserves shopping list
- ......................................................................... shopping list
- glaze shopping list
- 1/3 cup powdered sugar shopping list
- 2 - 3 teasp. lemon juice shopping list
How to make it
- preheat oven to 350' F
- grease and flour bottom of a 10-inch springform pan
- In a large mixer bowl.... combine all the cake ingredients
- beat at medium speed , scraping bowl often, until well mixed
- spread batter over the bottom of the baking pan and 2-inches up the sides
- in a small mixer bowl.... combine the filling ingredients EXCEPT for the apricot preserves
- Beat at medium speed, scraping the sides of the bowl often. until smooth about 2 -3 minutes
- pour filling mixture over the batter in the pan...
- spoon the preserves evenly as possible over the filling
- bake in a 350' F oven for 45 -55 minutes or until crust is golden brown
- cool 20 minutes. then remove the sides of the pan
- while the cake is cooling..... in a small bowl stir together the powdered sugar and the lemon juice until smooth
- drizzle over warm coffee cake
- serve warm or cold
- store in the refrigerator
