How to make it

  • preheat oven to 350' F
  • grease and flour bottom of a 10-inch springform pan
  • In a large mixer bowl.... combine all the cake ingredients
  • beat at medium speed , scraping bowl often, until well mixed
  • spread batter over the bottom of the baking pan and 2-inches up the sides
  • in a small mixer bowl.... combine the filling ingredients EXCEPT for the apricot preserves
  • Beat at medium speed, scraping the sides of the bowl often. until smooth about 2 -3 minutes
  • pour filling mixture over the batter in the pan...
  • spoon the preserves evenly as possible over the filling
  • bake in a 350' F oven for 45 -55 minutes or until crust is golden brown
  • cool 20 minutes. then remove the sides of the pan
  • while the cake is cooling..... in a small bowl stir together the powdered sugar and the lemon juice until smooth
  • drizzle over warm coffee cake
  • serve warm or cold
  • store in the refrigerator
