Mediterranean Puff Pastry Chicken Pies Recipe
Chicken marinated in garlic, layered with sun-dried tomatoes, pesto, spinach, and feta cheese, and wrapped in flaky puff pastry. Delicious!

Ingredients
  • 25 g crushed garlic
  • 1 egg yolk
  • 60 g chopped fresh spinach
  • 2 boneless skinless chicken breast halves
  • 30 g basil pesto
  • 20 g chopped sun-dried tomatoes
  • 65 g crumbled herbed feta cheese
  • 2 frozen puff pastry sheets, thawed

Directions
  1. combine crushed garlic and egg yolk.
  2. Place chicken breasts in a shallow glass dish and spread both sides with egg mixture. Cover dish with plastic wrap and refrigerate 4 hours, or overnight (recommended).
  3. Preheat oven to 375 degrees F (190 degrees C). Grease a baking sheet.
  4. Working on a lightly floured surface, unroll one puff pastry sheet.
  5. Place 1/2 cup spinach in the center of the pastry sheet.
  6. Remove one chicken breast from marinade, shaking off any excess, and place on top of spinach.
  7. Spread 1 tablespoon pesto over chicken, layer with half the sun-dried tomatoes, sprinkle with half the feta cheese, and top with 1/2 cup spinach.
  8. Fold pastry sheet around chicken, using fork to seal pastry seam.
  9. Place chicken seam side down on baking sheet.
  10. Repeat steps with the second puff pastry sheet and remaining chicken breast.
  11. Bake 35 to 40 minutes.
