Ingredients
  • 4 thick-cut pork chops (please, no boneless!)
  • flour, salt, and pepper
  • 2 T. butter
  • 1 c. heavy cream

Directions
  1. You only need about 1/4 c. flour. Put it on a plate, and season generously with salt and pepper. Coat both sides of the chops with the seasoned flour.
  2. Melt the butter in a pan over medium heat. Add the chops and brown over medium heat, about five or six minutes per side. Pour the cream over the chops, then turn them a couple of times. Cover the pan, turn down to medium-low, and cook for 20 minutes.
  3. Remove the chops to a serving platter and turn the heat up high. Stir constantly, and the cream will reduce, carmelize, and thicken. Pour over the chops.
