Soba Chicken And Vegetables Recipe
I made this up last night with what I had on hand. It could be easily multiplied up to feed as many as you need.

Ingredients
  • 2 boneless chicken breasts, trimmed and sliced thinly
  • Marianade ingredients:
  • 1 Tablespoon oyster sauce
  • 1 Tablespoon mushroom soy sauce
  • 1 Tablespoon soy sauce
  • 1 Tablespoon mirin
  • 1 Tablespoon sherry
  • 1 teaspoon minced ginger
  • 1 teaspoon minced garlic
  • Stir fry ingredients:
  • canola or peanut oil
  • 1/2 red onion, chopped
  • 1 long hot pepper, cut into 4 or 5 big chunks
  • 1 zucchini, sliced into chunks
  • 1 small bok choy, separated into leaves and stems and coarsely chopped
  • 2 bundles soba noodles
  • soy sauce for serving

Directions
  1. Mix all marinade ingredients in bowl and add chicken.
  2. Cover and refrigerate for 30 minutes to 3 hours.
  3. Boil water and cook soba according to package (don't overcook)
  4. Heat wok over high heat.
  5. Add oil, and then chicken in batches to brown.
  6. Remove chicken to side plate and cover.
  7. Reheat wok and add more oil if needed.
  8. Stir fry onion, zucchini and bok choy stems until partially cooked and browning.
  9. Add bok choy stems and chicken, and heat through.
  10. Add soba and toss until combined.
  11. Serve with soy sauce on the side.
