The lemon and garlicky Mediterranean dressing complements the meaty fava beans perfectly.
Ingredients
- 1 (19 ounce) can fava beans, drained shopping list
- 2 medium fresh tomatoes, chopped shopping list
- 1 small onion or green pepper, diced shopping list
- 1 cucumber, diced shopping list
- 2 cloves garlic, minced shopping list
- 1/4 cup chopped fresh parsley shopping list
- 1 lemon, juiced shopping list
- 3 tablespoons olive oil shopping list
- 1 teaspoon ground cumin shopping list
- salt and black pepper to taste shopping list
How to make it
- Combine fava beans, tomatoes, onion, and cucumber in a salad bowl. Toss with garlic, parsley, lemon juice, and olive oil. Season with cumin, and salt and pepper to taste.
