Red Pepper Soup

- 6 tablespoons margarine shopping list
- 2 tablespoons olive oil shopping list
- 8 red peppers, diced shopping list
- 4 carrots, diced shopping list
- 3 shallots, diced shopping list
- 2 cloves garlic, minced shopping list
- 2 pears, chopped shopping list
- 12 cups chicken stock or broth shopping list
- 4 large strips roasted red peppers shopping list
- 1 teaspoon crushed red pepper shopping list
- dash of cayenne pepper shopping list
- salt and black pepper to taste shopping list
How to make it
- In a large stock port, heat oil and margarine. Add vegetables and saute over medium heat for 8-10 minutes. Add remaining ingredients and bring to a boil. Take off heat to cool long enough to puree. Put back into pot, cover, reduce heat, and simmer for 1/2 hour.
