tomato avacado salad

- 1/2 cup light olive oil shopping list
- grated rind and juice from 1/2 lemon shopping list
- pinch of salt shopping list
- pinch of pepper shopping list
- 1/2 tsp balsamic vinegar (optional) shopping list
- 3 farm fresh tomatoes shopping list
- 3 ripe avacadoes shopping list
- basil shopping list
How to make it
- combine oil, lemon rind, lemon juice, salt, and pepper, and balsamic vinegar (if used) shake, or wisk well
- slice tomatoes and avacados and arrange on serving plate alternating a slice of tomato and a slice of avacado
- drizzle dressing over top
- roll up several basil leaves and slice thinly so you have little threads of basil, scatter over top
- serve immediately avacado will brown quickly (but the lemon does help)
