How to make it

  • combine oil, lemon rind, lemon juice, salt, and pepper, and balsamic vinegar (if used) shake, or wisk well
  • slice tomatoes and avacados and arrange on serving plate alternating a slice of tomato and a slice of avacado
  • drizzle dressing over top
  • roll up several basil leaves and slice thinly so you have little threads of basil, scatter over top
  • serve immediately avacado will brown quickly (but the lemon does help)
