Sassafrass Jelly Recipe
My Momma used to make this along with sassafrass tea. it brings back so many memories.

Ingredients
  • Sassafras roots
  • 1 package powdered pectin
  • 3 cups honey
  • 2 tablespoons sassafras root bark, (make sure you grind it real fine)

Directions
  1. Boil sassafrasS roots for 30 minutes.
  2. Then go on and strain them.
  3. Get 2 cups of the sassafrass tea into a large saucepan.
  4. Add the envelope of pectin.
  5. Bring to just simmering.
  6. Add the honey and the root bark.
  7. Simmer for about 5-6 minutes.
  8. Then put into sterilized glasses. If you are doing halfpints then boil for 5 minutes in hot water.
