Sunnies Tomato Basil Soup

- ***4-5 roma tomatoes diced fine (you can remove the skin if you want) shopping list
- ***1/4 white onion diced fine shopping list
- ***1 tbsp. olive oil shopping list
- ***Dash of cayenne pepper shopping list
- ***Dash of garlic powder shopping list
- ***Dash of italian season shopping list
- ***Dash of salt and pepper shopping list
- Over medium high, heat oil in stock pot and add tomatoes, onion, and season. Sautee and stir for 5 minutes or until onions are tender. shopping list
- ***1/2 tbsp. minced garlic (from jar is fine) shopping list
- Add garlic to tomato onion mixture and cook stirring often for 1-2 minutes (Do not over cook garlic). shopping list
- ***3 1/2 Cups low sodium V8 shopping list
- Add V8 to tomato mixture and simmer over medium heat for 15-30 minutes stirring often. Take off of heat. Pour into a clean large bowl or pot. shopping list
- ***1 can cold Italian stewed tomatoes (put in refrigerator to cool while dicing tomatoes and onion) shopping list
- ***15 fresh washed basil leaves rough chopped shopping list
- Add stewed tomatoes to mixture and allow to cool slightly before adding basil. When cooled off (not hot...warm is fine), shopping list
- pour in 2 batches and blend until smooth in blender (color will turn more orange rather than red-orange). (Or just leave in pot and use an immersion blender.) (I blended the soup while it was hot and soup went everwhere...I learned my lesson.) shopping list
- Pour mixture back into original stock pot shopping list
- ***1 pint heavy whipping cream shopping list
- ***1/2 cup (1 Stick) real butter (cut up) shopping list
- ***pinch of salt (to taste) shopping list
- ***about 1 tsp. fresh ground black pepper shopping list
- Add the above ingredients over medium low heat, warm soup back up stirring often (do not boil). shopping list
- *** juice of ½ fresh lemon shopping list
- Add lemon juice last, stir and shopping list
- Enjoy! shopping list
