Ingredients
  • 1/4 c. unsalted butter
  • 1/2 c. onion, diced
  • 1 c. carrots, diced
  • 1 c. celery, diced
  • 1/2 c. green peppers, diced
  • 1/2 lb. loose hot sausage
  • and and pepper to taste
  • 1/4 c. flour
  • 4 c. chicken broth
  • 10 slices American cheese (Land o'Lakes)
  • 1 t. paprika
  • 1 c. milk
  • 1 can corn, drained
  • fresh parsley, minced

Directions
  1. In a large soup pot, melt butter and saute all the veggies and sausage until the sausage is cook through.
  2. Season with salt and pepper, drain the oil from the sausage. Over medium heat, stir in flour and add chicken broth stirring until thickened. Add cheese, paprika and milk and stir until melted. Add corn and continue heat without boiling. Taste and adjust seasoning, if necessary. Serve with a sprinkle of parsley on top.
