santa fe chicken

- 1 onion chopped shopping list
- 3 cloves garlic minced shopping list
- 1 tbl olive oil shopping list
- 9 oz pk. frozen fully cooked diced chicken shopping list
- 2 15 oz cans blk beans drained shopping list
- 1 small can corn drained shopping list
- a few blk olives sliced drained shopping list
- 34 oz jar thick chunky salsa shopping list
- 1 cup taco sauce shopping list
- 8 corn tortillas shopping list
- 1 cup sour cream shopping list
- 2 cup shredded colby njack cheese shopping list
How to make it
- use med. micro safe bowl
- cook onion,garlic in olive oil on power 10 for 2 1/2 minutes
- covered until tender.
- stir in frozen chicken ,blk beans,corn,blk. olives and salsa
- using a 2 qt.glass baking dish- pour taco sauce on bottom.
- lay 4 corn tortillas over sauce.
- top with 1/2 of chicken mixture
- spoon on 1/2 of sour cream in small dollops.
- sprinkle with 1/2 the cheese. top with remaining tortillas and chicken mixtureand sour cream an cheese. cover with foil.
- at this point you can wrap the casserolle well and freeze for up to three months
- bake at 350 degrees for 25- 35 minutes until bubbbly- uncover and bake 5-10 minutes longer until cheese melts
