How to make it

  • use med. micro safe bowl
  • cook onion,garlic in olive oil on power 10 for 2 1/2 minutes
  • covered until tender.
  • stir in frozen chicken ,blk beans,corn,blk. olives and salsa
  • using a 2 qt.glass baking dish- pour taco sauce on bottom.
  • lay 4 corn tortillas over sauce.
  • top with 1/2 of chicken mixture
  • spoon on 1/2 of sour cream in small dollops.
  • sprinkle with 1/2 the cheese. top with remaining tortillas and chicken mixtureand sour cream an cheese. cover with foil.
  • at this point you can wrap the casserolle well and freeze for up to three months
  • bake at 350 degrees for 25- 35 minutes until bubbbly- uncover and bake 5-10 minutes longer until cheese melts
