Ingredients
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 tbl olive oil
  • 9 oz pk. frozen fully cooked diced chicken
  • 2 15 oz cans blk beans drained
  • 1 small can corn drained
  • a few blk olives sliced drained
  • 34 oz jar thick chunky salsa
  • 1 cup taco sauce
  • 8 corn tortillas
  • 1 cup sour cream
  • 2 cup shredded colby njack cheese

Directions
  1. use med. micro safe bowl
  2. cook onion,garlic in olive oil on power 10 for 2 1/2 minutes
  3. covered until tender.
  4. stir in frozen chicken ,blk beans,corn,blk. olives and salsa
  5. using a 2 qt.glass baking dish- pour taco sauce on bottom.
  6. lay 4 corn tortillas over sauce.
  7. top with 1/2 of chicken mixture
  8. spoon on 1/2 of sour cream in small dollops.
  9. sprinkle with 1/2 the cheese. top with remaining tortillas and chicken mixtureand sour cream an cheese. cover with foil.
  10. at this point you can wrap the casserolle well and freeze for up to three months
  11. bake at 350 degrees for 25- 35 minutes until bubbbly- uncover and bake 5-10 minutes longer until cheese melts
