Ingredients
  • 4 cups cubed peeled butternut squash
  • 1 medium onion, cut into thin wedges
  • 2 tbs apple cider
  • 1 tbs olive oil
  • 1-1/2 tsp brown sugar
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp ground nutmeg

Directions
  1. Place the squash and the onion in a greased 13x9x2" baking dish. Combine the cider, oil, brown sugar, salt, pepper and nutmeg; pour over squash mixture.
  2. Cover and bake at 450ยบ for 35 minutes or until tender, stirring every 10 minutes.
  3. Yield 4-6 servings
