How to make it

  • Mix the first six ingredients in a bowl and set aside.
  • Flake the tuna well and then add enough of the dill mixture to it to make it as you'd enjoy. Add in chopped water chestnuts, too, to desired texture and crunch.
  • Remove the stem end and hollow out the tomatoes to leave a nice shell. If they won't stand up straight use a really sharp knife to create a level bottom, cutting away as little as possible.
  • Fill the tomatoes with the tuna mixture, arrange over the greens, and add a spring of parsley to each as a bit of garnish.
