How to make it

  • Muffins:
  • Combine in large bowl:
  • 1 ½ cup Oat Bran
  • 1 cup Flour
  • 1 cup Ground Flaxseed
  • 1 cup Wheat Bran
  • 1 Tbls. Baking Powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • Mix in Blender:
  • 1 cup Brown sugar
  • 3 eggs (or egg substitute)
  • 1 orange; quartered/peeled/seeded
  • 1 cup Buttermilk (or milk/soymilk)
  • ¼ cup Canola Oil
  • 1 tsp Baking Soda
  • 1 tsp Vanilla
  • Stir in:
  • 1 cup Golden Raisins
  • 1 Apple, peeled & grated
  • 1 ½ cup Carrots, shredded
  • 1 cup chopped Nuts
  • Divide batter evenly among 24 muffins cups –lined or sprayed.
  • Bake 375° for 18 – 20 minutes or until tooth pick comes out clean.
  • Cool in pan 5 minutes before removing to a cooling rack.
  • These freeze and reheat very well.
