Health Nut Muffins

- 1 ½ cup oat bran shopping list
- 1 cup flour shopping list
- 1 cup Ground Flaxseed shopping list
- 1 cup wheat bran shopping list
- 1 Tbls. baking powder shopping list
- 1 tsp cinnamon shopping list
- ½ tsp salt shopping list
- 1 cup brown sugar shopping list
- 3 eggs (or egg substitute) shopping list
- 1 orange; quartered/peeled/seeded shopping list
- 1 cup buttermilk (or milk/soymilk) shopping list
- ¼ cup canola oil shopping list
- 1 tsp baking soda shopping list
- 1 tsp vanilla shopping list
- 1 cup golden raisins shopping list
- 1 apple, peeled & grated shopping list
- 1 ½ cup carrots, shredded shopping list
- 1 cup chopped nuts shopping list
How to make it
- Muffins:
- Combine in large bowl:
- 1 ½ cup Oat Bran
- 1 cup Flour
- 1 cup Ground Flaxseed
- 1 cup Wheat Bran
- 1 Tbls. Baking Powder
- 1 tsp cinnamon
- ½ tsp salt
- Mix in Blender:
- 1 cup Brown sugar
- 3 eggs (or egg substitute)
- 1 orange; quartered/peeled/seeded
- 1 cup Buttermilk (or milk/soymilk)
- ¼ cup Canola Oil
- 1 tsp Baking Soda
- 1 tsp Vanilla
- Stir in:
- 1 cup Golden Raisins
- 1 Apple, peeled & grated
- 1 ½ cup Carrots, shredded
- 1 cup chopped Nuts
- Divide batter evenly among 24 muffins cups –lined or sprayed.
- Bake 375° for 18 – 20 minutes or until tooth pick comes out clean.
- Cool in pan 5 minutes before removing to a cooling rack.
- These freeze and reheat very well.
