Herbed Lamb Chops With Balsamic Reduction Recipe
An easy and elegant preparation for lamb chops.

Ingredients
  • 8 loin lamb chops
  • 1 t. chopped garlic
  • 2 t. dried basil
  • 2 t. dried thyme
  • 2 T. fresh rosemary
  • ¼ t. Kosher salt
  • ½ t. black pepper
  • 4 T. olive oil
  • 3 shallots, minced
  • ½ c. aged balsamic vinegar
  • ¾ c. chicken broth
  • 2 T. unsalted butter

Directions
  1. Make a paste of garlic, herbs, salt, pepper and 2 T. olive oil. Pat on both sides of chops and allow to sit out of the refrigerator for 30 minutes to an hour.
  2. Heat a heavy skillet with 2 T. olive oil. Sear chops on all sides, cover chops and turn heat to medium low. Cook until done. Remove chops and keep warm. Add butter and shallots to skillet and cook until soft. Add vinegar and chicken broth. Continue to cook until sauce is syrupy. Serve chops with sauce.
