Gourmet GOUJONS OF SOLE PARMESAN

- 1 1/2 - 2lb lemon or Dover sole fillets, skinned shopping list
- 2 tblsp seasoned flour shopping list
- 1 egg (beaten) shopping list
- 4 tblsp fresh breadcrumbs shopping list
- 2 tblsp parmesan cheese (grated) shopping list
- 3oz clarified butter or sunflower oil shopping list
- 2 small bananas shopping list
- 1/2 oz butter shopping list
- 1 lemon shopping list
- 2oz flaked almonds (toasted) shopping list
How to make it
- Mix the breadcrumbs and Parmesan cheese and set aside.
- Cut the fillets of fish diagonally into finger-like strips.
- Coat the fish in seasoned flour, then the beaten egg and finally the breadcrumbs and Parmesan.
- Do a few pieces at a time making sure the fish is well coated at each stage.
- Fry the fish in clarified butter or sunflower oil until crisp and golden brown.
- Transfer to a serving dish and keep warm.
- Wipe the frying pan with absorbent paper.
- Peel the bananas, cut into thick slices on the diagonal and fry quickly in a knob of butter until golden brown.
- Arrange the bananas and almonds around the fish and serve immediately with lemon wedges.

- Any white fish is suitable for this recipe. If preferred, you can omit the banana and almonds and serve the goujons simply with lemon wedges and tartare sauce
