How to make it

  • Mix the breadcrumbs and Parmesan cheese and set aside.
  • Cut the fillets of fish diagonally into finger-like strips.
  • Coat the fish in seasoned flour, then the beaten egg and finally the breadcrumbs and Parmesan.
  • Do a few pieces at a time making sure the fish is well coated at each stage.
  • Fry the fish in clarified butter or sunflower oil until crisp and golden brown.
  • Transfer to a serving dish and keep warm.
  • Wipe the frying pan with absorbent paper.
  • Peel the bananas, cut into thick slices on the diagonal and fry quickly in a knob of butter until golden brown.
  • Arrange the bananas and almonds around the fish and serve immediately with lemon wedges.

  • Any white fish is suitable for this recipe. If preferred, you can omit the banana and almonds and serve the goujons simply with lemon wedges and tartare sauce
