Tortilla Soup

- 8 corn tortillas,halved and thinly sliced shopping list
- canola or olive oil cooking spray shopping list
- 1Tbs canola oil shopping list
- 3 anaheim or pablano peppers shopping list
- 1 medium onion,diced shopping list
- 1tsp ground cumin shopping list
- 1lb. boneless,skinless chicken thighs,trimmed and cut into 1" pieces shopping list
- 4 c sodium-reduced chicken broth shopping list
- 1 14oz. can diced tomatoes with green chiles shopping list
- 2Tbs lime juice shopping list
- 1/2c shreaded cheddar cheese shopping list
- 1/4c frsh cilantro,chopped shopping list
How to make it
- Preheat oven to 400
- Spread tortilla chips in an even layer on a baking sheet and coat with cooing spray. Bake till browned and crispy,12-15 mins
- Meanwhile,heat oil in large saucepan over med. heat Add peppers and onions and cook,stirring,until the onion begins to soften,3-5 mins. Add cumin,and cook,stirring 1 min. Add chicken,broth,tomatoes and their juice. Bring to a boil.reduce heat and simmer till chicken is just cooked through,12-15 mins.. Remove from heat and stir in lime juice. Serve each portion topped with some of the baked tortilla strips,cheddar and cilantro.
