Spinach Lasagne

- * 12 fresh Lasagne sheets shopping list
- * 500 g spinach leaves shopping list
- * 250 g ricotta cheese shopping list
- * 200 g cheddar cheese, grated shopping list
- * 200 g Mozzarella, grated shopping list
- * 1/2 tsp nutmeg shopping list
- * 40 g pine nuts, lightly toasted shopping list
- * 10 g Parmesan, grated shopping list
- * 20 g butter shopping list
- * salt and pepper shopping list
- White sauce: shopping list
- * 850 ml milk shopping list
- * 40 g butter shopping list
- * 40 g flour shopping list
- * 50 g Parmesan, grated shopping list
- * salt and pepper shopping list
How to make it
- Method:
- * To make the sauce: Pour the milk into a saucepan and add butter, flour and salt and pepper. Cook over medium heat while stirring continuously for 5 minutes, then simmer over low heat for 5 minutes until thickened. Remove from the heat, stir in the parmesan, then cover and leave aside.
- * Preheat the oven to 180 C/ gas mark 4.
- * Cook the spinach leaves in a large saucepan with 20 g butter and some salt for about 2 minutes, stiring once. Drain the spinach and squeeze to remove as much water as possible. Chop the spinach leaves finely and put in a large bowl.
- * Add ricotta, nutmeg, 1/3 of the white sauce and salt and pepper and mix well. Add grated cheddar and roasted pine nuts and mix well.
- * Pour a few spoons of sauce at the bottom of an oven proof dish (23cm x 23cm), then spread a few spoons of spinach mixture and a handful of grated mozzarella before putting a layer of lasagne sheets on top. Repeat this procedure for another two times.
- * After putting the last layer of lasagne sheets, pour over the remaining sauce with mozzarella and sprinkle the top with grated parmesan.
- * Cook in the oven for 60 minutes and leave for 5 minutes before serving.

Sounds great, being a Yank (albeit a mid western one) I would have to take some time to decipher the metric to standard otherwise it would be a real chore. It does look good.
