Spinach Lasagne Recipe
My favourite vegetarian Italian dish. The combination of ricotta, spinach and toasted pine nuts with just a hint of nutmeg does wonders.

  • Ingredients:
  • * 12 fresh Lasagne sheets
  • * 500 g Spinach leaves
  • * 250 g Ricotta cheese
  • * 200 g Cheddar Cheese, grated
  • * 200 g Mozzarella, grated
  • * 1/2 tsp Nutmeg
  • * 40 g Pine nuts, lightly toasted
  • * 10 g Parmesan, grated
  • * 20 g Butter
  • * Salt and Pepper
  • White sauce:
  • * 850 ml Milk
  • * 40 g Butter
  • * 40 g Flour
  • * 50 g Parmesan, grated
  • * Salt and Pepper

Directions
  1. Method:
  2. * To make the sauce: Pour the milk into a saucepan and add butter, flour and salt and pepper. Cook over medium heat while stirring continuously for 5 minutes, then simmer over low heat for 5 minutes until thickened. Remove from the heat, stir in the parmesan, then cover and leave aside.
  3. * Preheat the oven to 180 C/ gas mark 4.
  4. * Cook the spinach leaves in a large saucepan with 20 g butter and some salt for about 2 minutes, stiring once. Drain the spinach and squeeze to remove as much water as possible. Chop the spinach leaves finely and put in a large bowl.
  5. * Add ricotta, nutmeg, 1/3 of the white sauce and salt and pepper and mix well. Add grated cheddar and roasted pine nuts and mix well.
  6. * Pour a few spoons of sauce at the bottom of an oven proof dish (23cm x 23cm), then spread a few spoons of spinach mixture and a handful of grated mozzarella before putting a layer of lasagne sheets on top. Repeat this procedure for another two times.
  7. * After putting the last layer of lasagne sheets, pour over the remaining sauce with mozzarella and sprinkle the top with grated parmesan.
  8. * Cook in the oven for 60 minutes and leave for 5 minutes before serving.

Sounds great, being a Yank (albeit a mid western one) I would have to take some time to decipher the metric to standard otherwise it would be a real chore. It does look good.
