This is the way I do my pico. It's fresh, delicious, uses up some of those extra tomatoes from the kitchen window and truly compliments a taco salad, Mexican meal, or anything slightly spicy. Enjoy! --Kn0x--

Ingredients
  • 6-8 medium tomatoes--red, yellow, peach, early girls or whatever you have
  • 1/2 cup red onion
  • large handful cilantro
  • 1 medium jalapeno
  • 1 teaspoon salt
  • 3 Tbs. vinegar
  • 1 Tbs. lemon juice
  • 1/2 tsp. black pepper
  • 1 tsp. garlic, finely minced

Directions
  1. Seed tomatoes well, chop into small pieces.
  2. Finely dice red onion, then seed and finely dice/mince the jalapeno.
  3. De-stem most of the cilantro, chopping finely.
  4. Place all into a glass mixing bowl, and top with the other ingredients.
  5. Toss well, cover and refrigerate for a couple hours before serving.
  6. Toss well again before serving.
  7. Enjoy!

Sounds great. Exactly the way I do mine except I don't use vinegar, HOWEVER I'm going to try it, I think it will make a great addition. High 5 and a great post my friend. Yummers.
