Old Fashioned Baked Buttermilk Chicken Recipe
This is my favorite baked chicken recipe of all times!

Ingredients
  • You really don't have to measure-just portion out dry ingredients to your liking.
  • Bone-in chicken pieces
  • 2 T.melted butter
  • 2 C.buttermilk
  • 1 packet of Hidden Valley Ranch buttermilk dressing
  • 1 C.unflavored slow cooking oatmeal
  • 1 C.instant mashed potato flakes
  • 1 C.crushed Ritz crackers
  • salt and pepper to taste
  • shortening

Directions
  1. Preheat oven to 350 degrees.
  2. Rinse chicken and set aside while you are preparing the batter:
  3. Mix melted butter/buttermilk.
  4. In separate bowl,mix all dry ingredients.
  5. Dip chicken into buttermilk mixture,then into dry mixture.
  6. Place in large roasting pan.
  7. Place a few small dollops of shortening inbetween the pieces.
  8. Bake for approx 60-75 minutes,or until a nice golden brown.
  9. **Serve with seasoned skin on mashed potatoes.

Very yummy sounding ... sounds like a good recipe for the fall / winter... and i bet my sauteed green beans would kick this off with the mashed potatoes.
