How to make it

  • Prepare your smoker,and maintain at 165
  • Mix the ingredents for rub.
  • Wash and dry salmon,massage in the dry rub mixture.
  • Brush oil on salmon and cheesecloth,wrap salmon in cheesecloth.
  • Place in smoker away from heat
  • Cheescloth will get dark,but allow smoke to permeate.
  • Cook for about 3 hours,until flaky
