Couscous Veggie Bake

- Any vegetables of your choice (600g): shopping list
- Butternut cubed, shopping list
- Red and green peppers, shopping list
- courgettes, shopping list
- broccoli, shopping list
- Patty pans, shopping list
- carrots, shopping list
- any veg that you like! shopping list
- fresh herbs - I love basil or rosemary, garlic & lemon salt, veggie spices shopping list
- A tiny bit of olive oil, shopping list
- salt and Pepper, shopping list
- About a cup of couscous ready made shopping list
- feta to your taste. shopping list
How to make it
- Preheat your oven to 180 Degrees Celsius
- Throw all your veggies in a roasting pan
- Coat with a little olive oil
- Season with your fresh herbs, garlic, salt and pepper, veggie spice
- Bake for 45 minutes - all depending on your vegetables ( butternut, potatoes & carrots take longer)
- If you have no hard vegetables, then probably about 30 minutes
- Once cooked transfer to your serving dish, add your ready made couscous and feta - I like to crumble the pieces
- Mix all together and serve!

Couscous is easy to make and a wonderful compliment to vegetables prepared this way. In summertime I have plenty of vegetables to choose from to make this Couscous Veggie Bake.
