How to make it

  • Preheat your oven to 180 Degrees Celsius
  • Throw all your veggies in a roasting pan
  • Coat with a little olive oil
  • Season with your fresh herbs, garlic, salt and pepper, veggie spice
  • Bake for 45 minutes - all depending on your vegetables ( butternut, potatoes & carrots take longer)
  • If you have no hard vegetables, then probably about 30 minutes
  • Once cooked transfer to your serving dish, add your ready made couscous and feta - I like to crumble the pieces
  • Mix all together and serve!

    Couscous is easy to make and a wonderful compliment to vegetables prepared this way. In summertime I have plenty of vegetables to choose from to make this Couscous Veggie Bake.
