Couscous Veggie Bake Recipe
This dish is my all time favorite veggie dish! It can be accompanied by anything from fillet to fish! Absolutely love it!!

Ingredients
  • Any vegetables of your choice (600g):
  • Butternut cubed,
  • Red and green peppers,
  • Courgettes,
  • Broccoli,
  • Patty pans,
  • Carrots,
  • any veg that you like!
  • Fresh herbs - I love basil or rosemary, Garlic & Lemon salt, veggie spices
  • A tiny bit of olive oil,
  • Salt and Pepper,
  • About a cup of Couscous ready made
  • Feta to your taste.

Directions
  1. Preheat your oven to 180 Degrees Celsius
  2. Throw all your veggies in a roasting pan
  3. Coat with a little olive oil
  4. Season with your fresh herbs, garlic, salt and pepper, veggie spice
  5. Bake for 45 minutes - all depending on your vegetables ( butternut, potatoes & carrots take longer)
  6. If you have no hard vegetables, then probably about 30 minutes
  7. Once cooked transfer to your serving dish, add your ready made couscous and feta - I like to crumble the pieces
  8. Mix all together and serve!

Couscous is easy to make and a wonderful compliment to vegetables prepared this way. In summertime I have plenty of vegetables to choose from to make this Couscous Veggie Bake.
