A rich salad, full of goodies. Nice for a Mexican theme potluck. Thanks, Lara!

Ingredients
  • DRESSING
  • 3 avocados (DIVIDED)
  • 1/2 c. sour cream
  • 1/4 c. lemon juice (DIVIDED)
  • 1 T. finely chopped onion
  • 1 T. water
  • 1/4 t. salt
  • 1/4 t. hot pepper sauce
  • SALAD
  • 6 c. salad greens
  • 1 large tomato, chopped
  • 1 c. (4 oz.) shredded cheddar or jack cheese
  • 1/2 c. sliced olives
  • 1 c. coarsely crushed tortilla chips

Directions
  1. DRESSING
  2. Mash ONE avocado, stir in sour cream, 3 T. lemon juice, onion, water, salt, and hot pepper sauce;
  3. Chill to blend flavors.
  4. SALAD
  5. In salad bowl sprinkle 1 T. lemon juice on TWO avocados;
  6. Top with lettuce, tomato, cheese, olives;
  7. Chill.
  8. Just before serving, toss with avocado dressing and tortilla chips.
