Paella Salad

- 1 Cup Regular rice shopping list
- 1teaspoon saffron(to make the rice a pretty golden yellow,but adds to the dish flavor as will I beleive) shopping list
- chicken broth shopping list
- 1/2 Cup Clear French (or) Italian salad dressing with herbs. shopping list
- 1Cup frozen peas,thawed shopping list
- 2 fresh tomatoes,peeled,seeded,chopped shopping list
- 1/4 Cup sweet green pepper,chopped shopping list
- 1/4 Cup green onion,sliced shopping list
- 6oz of cooked lobster,broken in chunks shopping list
- 5oz of cooked shrimp shopping list
- 1 Cup cooked chicken shopping list
- 4 oz smoked sausage,sliced shopping list
- lettuce and Tomato shopping list
How to make it
- Cook the rice in chicken broth,with saffron for about 25 minutes,or until broth is absorbed.
- Stir in salad dressing.
- Refrigerate for 2 hours.
- Fold in peas,chopped tomatoes,green pepper and green onion,lobster,shrimp,chicken and suasage,may need to add a little more salad dressing.
- Chill,serve on lettuce leaves,with tomato wedges.
