Shrimp Singapore Recipe
These are a curried style Shrimp with bananas. The bananas add a sweetness to the dish without making it "candy" sweet. A great balance of curry and sweet. The use of pre-cooked shrimp makes this a fast dish to put together.

Ingredients
  • 4 Tbl. butter
  • 4 Tbl. flour
  • 1 tsp. curry powder, hot or mild...your call
  • 1 tsp salt
  • dash cayenne pepper
  • 2 cups chicken stock
  • 1 pound cooked shrimp, shelled
  • 2 bananas ripe but firm, peeled and quartered

Directions
  1. Melt butter in a sauce pan.
  2. Blend in the flour, curry powder, salt and cayenne.
  3. Add the stock.
  4. Cook stirring constantly , until thickens and comes to a boil.
  5. Add the shrimp and bananas to the sauce mixture,
  6. Cook until heated through.
  7. Serve with white rice.
