Quick And Easy Gumbo Recipe
I concocted this Okie version of gumbo & it quickly became a must-have at many a potluck dinner!

Ingredients
  • 1 Box Zatarain's Hoppin' John Mix
  • 1/2 C. chopped onion
  • 3 T. butter
  • 2 C. chopped okra (frozen or fresh)
  • 2 C. chicken leftovers
  • 2 links bratwurst, in coins
  • 2 C. chicken broth
  • 1 can seasoned diced tomatoes (half drained)
  • 1 1/2 T. minced garlic
  • salt & pepper
  • 2 tsp. parsley flakes
  • 1 T. creole seasoning (more or less, depending on taste)

Directions
  1. Prepare rice mix per package directions.
  2. While rice is simmering, melt butter in large pot, cook okra and onion until onion softens.
  3. Add broth & tomatoes, simmer until rice is done.
  4. Season okra pot with garlic, creole, salt, pepper, parsley..
  5. Add rice mix to okra pot, stir well, reduce heat.
  6. Add chicken & bratwurst.
  7. Let stand about 10 minutes.

The Hoppin' John mix can be hard to find. I've also subbed a can of black eyed peas, about a cup of rice and about a tablespoon of chopped jalapenos for it.

Alterations


I couldn't find the Hoppin' John and used the Zatarain's Gumbo mix. It worked out great. Also used turkey kielbasa instead of the bratwurst.
