This is my Aunt Pat's recipe, and it's delicious. It has the consistency of a banana bread or coffee cake - and is a great way to eat your vegetables :)

Ingredients
  • 2 c grated zucchini (peel first, if skin is tough)
  • ¾ c oil
  • 2 c sugar
  • 3 eggs
  • 3 sq melted unsweetened chocolate OR heaping ½ c cocoa powder + a little more oil & sugar
  • ½ c milk
  • 1 tsp vanilla
  • 2 ½ c flour
  • 2 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • Chocolate chips or walnuts, if desired

Directions
  1. Mix zucchini, oil, sugar, eggs, chocolate/cocoa, milk and vanilla. Add flour, baking powder, baking soda, salt, cinnamon and chocolate chips/walnuts (optional); mix until smooth.
  2. Pour into greased Bundt pan and bake at 350 for 50-55 minutes
  3. If using a 9X13 pan bake at 325-350 for 40-45 minutes
