Coconut Barfi

- 2 C white granulated sugar shopping list
- 3/4 C water shopping list
- 1 1/2 C fresh shredded coconut shopping list
- 1 tablespoon ghee (clarified butter) shopping list
- 1/2 teaspoon vanilla extract shopping list
- 2 cardamom pods, seeds finely powdered shopping list
- Few drops of food colouring of your choice shopping list
How to make it
- Add the sugar and water and cardamom pwd to a heavy, large saucepan.
- Cook the sugar in medium heat slightly golden colored .
- May take 15 to 20 mins .
- As soon as the sugar syrup reaches the right consistency, quickly add the shredded coconut .
- Stir the coconut and syrup mixture over medium heat until the mixture thickens abit and leaves the sides of the pan
- Stir in the ghee and food colour .
- Remove when you can see the bottom of the saucepan as you drag the spoon across it .
- Pour into a greased tray and spreading it evenly with a spatula .. Allow to cool for few mins and cut the burfi into squares or the shape u desire .
- Do not fully cut through.
- Allow it to cool awhile and turn it out onto a board and cut through it .
