Garlic Broccoli Sausage Farfalle Recipe

Just a simple summer pasta. It's good hot or cold. Uses only 2 pots and comes together quickly.

Ingredients
  • 3 T olive oil
  • 1 small onion, peeled & diced
  • 1 med. red bell pepper, seeded & diced
  • 1 LB bulk Sweet Italian Sausage
  • 1 fist sized head of garlic, peeled and chopped
  • fresh cracked pepper
  • 1 C chicken stock
  • 4 C fresh broccoli florets
  • 1 box farfalle (bow tie pasta)
  • 1.5 C shredded Parm, Romano, Asiago cheese blend

Directions
  1. Bring a large pot of heavily salted water to a boil.
  2. Blanch broccoli for 3 minutes, remove with slotted spoon, shock in ice bath and reserve.
  3. Return water to boil and cook pasta. Drain pasta but do not rinse.
  4. In a large skillet over medium heat place olive oil, onion & ground pepper. Saute until onion is translucent (about 4 minutes).
  5. Add sausage to pan and cook for 5 minutes.
  6. Add bell pepper and garlic, saute until garlic turns golden (about 3 minutes).
  7. Add chicken stock and bring to a boil, top with broccoli cover and cook for 2 minutes.
  8. Turn heat off, do not uncover and allow to sit for about 5 minutes or until broccoli is tender.
  9. Toss pasta with sauce and cheese and serve.
