Soft coconut-butter balls dipped in chocolate. They taste so much like "Mounds Bars" and are fun and easy to make! This recipe is a "must" in my mom's Christmas boxes to our family who live out-of-state!

Ingredients
  • 1 cup (2 sticks) real butter, softened
  • 1 pound confectioner's sugar
  • 1/2 can sweetened condensed milk
  • 1 11-ounce package shredded coconut
  • 1 cup chopped pecans (optional)
  • 1/2 teaspoon vanilla extract
  • 1/4 bar paraffin wax
  • 1 16-ounce package semi-sweet chocolate chips
  • waxed paper

Directions
  1. In large mixing bowl, combine softened butter, confectioner's sugar, sweetened condensed milk, coconut, and vanilla, and chopped pecans, if desired. Mix until well blended.
  2. Refrigerate until firm enough to form balls. (approximately 1 hour)
  3. Roll into small balls and place on waxed-paper lined baking sheet.
  4. Chill once again until firm.
  5. In double-boiler, melt paraffin wax and chocolate chips until melted and smooth.
  6. Dip coconut balls into chocolate mixture using toothpicks and place on waxed paper to set.
  7. May sprinkle additional coconut on top as garnish!
  8. Refrigerate in plastic container with lid.
  9. We make several layers with waxed paper to prevent sticking together.
  10. These also freeze well!
