Chocolate-coconut Truffles

- 1 cup (2 sticks) real butter, softened shopping list
- 1 pound confectioner's sugar shopping list
- 1/2 can sweetened condensed milk shopping list
- 1 11-ounce package shredded coconut shopping list
- 1 cup chopped pecans (optional) shopping list
- 1/2 teaspoon vanilla extract shopping list
- 1/4 bar paraffin wax shopping list
- 1 16-ounce package semi-sweet chocolate chips shopping list
- waxed paper shopping list
How to make it
- In large mixing bowl, combine softened butter, confectioner's sugar, sweetened condensed milk, coconut, and vanilla, and chopped pecans, if desired. Mix until well blended.
- Refrigerate until firm enough to form balls. (approximately 1 hour)
- Roll into small balls and place on waxed-paper lined baking sheet.
- Chill once again until firm.
- In double-boiler, melt paraffin wax and chocolate chips until melted and smooth.
- Dip coconut balls into chocolate mixture using toothpicks and place on waxed paper to set.
- May sprinkle additional coconut on top as garnish!
- Refrigerate in plastic container with lid.
- We make several layers with waxed paper to prevent sticking together.
- These also freeze well!
