Steamed Florida Clams With Pacific Spices

- 1/2 cup dry sake shopping list
- 1/4 cup fresh lime juice shopping list
- 24 fresh lime leaves shopping list
- 1 tablespoon Thai red curry paste shopping list
- 3 tablespoons sweet Hungarian paprika shopping list
- 1 tablespoon curry powder shopping list
- 1 teaspoon dark chili powder shopping list
- 1/2 teaspoon salt shopping list
- 60 fresh clams cleaned shopping list
- 3 cups peeled seeded and chopped fresh tomatoes shopping list
- 1/2 cup minced scallions green parts only shopping list
- 6 garlic cloves sliced extra thin shopping list
- 1 tablespoon chopped fresh ginger shopping list
- 1 cup cilantro leaves shopping list
How to make it
- In medium saucepan mix together sake, juice, leaves, paste, paprika, powders and salt.
- Add clams and cover.
- Place over high heat until clams are opened and cook 5 minutes from sight of first steam.
- Remove clams to 4 bowls and stir tomatoes, scallions, garlic and ginger into remaining hot broth.
- Spoon liquid evenly over hot clams then garish with lime leaves and cilantro.
