Stuffed Eggplant Recipe
This is almost like "Eggplant Parmgiana on the Half Shell". I list it under Main dishes, but it also makes a great brunch item when served with a bitter greens type salad.

Ingredients
  • 4 small eggplants, cut in half lengthwise
  • 1/2 pound whole milk mozzarella, cut into small cubes
  • 1/2 cup Italian seasoned bread crumbs
  • 2 Tbl. extra virgin olive oil
  • 3 anchovie fillets, chopped
  • 1 jar pizza sauce (14 oz.) or home made, divided
  • 1Tbl. Italian seasoning

Directions
  1. Preheat oven to 400 degrees.
  2. Grease a baking dish that is large enough to accomodate the 4 eggplant halves.
  3. Scoop out the flesh from the eggplants leaving an intact shell for stuffing.
  4. Cube the eggplant flesh and place in a mixing bowl.
  5. Add the mozzarella, anchovie, bread crumbs and 1/2 cup of pizza sauce, mix thoroughly.
  6. Divide the eggplant mixture among the 4 shells.
  7. Top each filled shell with the olive oil, then the remaining pizza sauce.
  8. Sprinkle each stuffed eggplant with the Italian seasoning.
  9. Place the eggplants in the greased baking dish and cook in the oven for 30 minutes (some eggplants may take a bit longer so test for tenderness).
  10. You can garnish these with either chopped Italian parsley or basil if you wish...Serve.
