How to make it

  • Preheat oven to 400 degrees.
  • Grease a baking dish that is large enough to accomodate the 4 eggplant halves.
  • Scoop out the flesh from the eggplants leaving an intact shell for stuffing.
  • Cube the eggplant flesh and place in a mixing bowl.
  • Add the mozzarella, anchovie, bread crumbs and 1/2 cup of pizza sauce, mix thoroughly.
  • Divide the eggplant mixture among the 4 shells.
  • Top each filled shell with the olive oil, then the remaining pizza sauce.
  • Sprinkle each stuffed eggplant with the Italian seasoning.
  • Place the eggplants in the greased baking dish and cook in the oven for 30 minutes (some eggplants may take a bit longer so test for tenderness).
  • You can garnish these with either chopped Italian parsley or basil if you wish...Serve.
