Stuffed Eggplant

- 4 small eggplants, cut in half lengthwise shopping list
- 1/2 pound whole milk mozzarella, cut into small cubes shopping list
- 1/2 cup Italian seasoned bread crumbs shopping list
- 2 Tbl. extra virgin olive oil shopping list
- 3 anchovie fillets, chopped shopping list
- 1 jar pizza sauce (14 oz.) or home made, divided shopping list
- 1Tbl. italian seasoning shopping list
How to make it
- Preheat oven to 400 degrees.
- Grease a baking dish that is large enough to accomodate the 4 eggplant halves.
- Scoop out the flesh from the eggplants leaving an intact shell for stuffing.
- Cube the eggplant flesh and place in a mixing bowl.
- Add the mozzarella, anchovie, bread crumbs and 1/2 cup of pizza sauce, mix thoroughly.
- Divide the eggplant mixture among the 4 shells.
- Top each filled shell with the olive oil, then the remaining pizza sauce.
- Sprinkle each stuffed eggplant with the Italian seasoning.
- Place the eggplants in the greased baking dish and cook in the oven for 30 minutes (some eggplants may take a bit longer so test for tenderness).
- You can garnish these with either chopped Italian parsley or basil if you wish...Serve.
