Macadamia  Coconut Mahi Mahi Recipe

Ingredients
  • 1/2 cup shredded coconut
  • 3/4 cup chopped macadamia nuts
  • 4, 6 to 8 0z. Mahi fillets
  • 4 Tbs honey Mustard dressing
  • salt and pepper to taste

Directions
  1. Toast coconut flakes on an oven sheet in a 300F oven. .
  2. Next toast nuts and set aside with coconut.
  3. Place both in food proceesor and pulse 2 to 3 times.
  4. Mixture should be powdery with some chunks.
  5. Lightly season fish with salt and pepper.
  6. Brush fish with honey mustard.
  7. Place coconut, macadmaia mixture over tops of fish.
  8. Bake in 375 oven for 12 to 15 minutes or cooked
  9. Garnish each piece with a fresh sprig of parsley
