ASIAN BEEF AND BROCCOLI This is a recipe I obtained from an estate sale. I obtained it when I purchased the family collection from the Olsen Estate in Grand Prairie, Texas in 1982.

Ingredients
  • 1 pound boneless beef sirloin cut 3/4" thick
  • 1 tablespoon vegetable oil
  • 1 can tomato soup
  • 3 tablespoons soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon garlic powder
  • 1/4 teaspoon crushed red pepper
  • 3 cups fresh or frozen broccoli flowerets
  • 4 cups hot cooked rice

Directions
  1. Slice beef into very thin strips then heat oil in skillet and add beef until browned.
  2. Add soup, soy, vinegar, garlic and pepper then heat to a boil.
  3. Add broccoli and cook until tender crisp then serve over rice.
