Ingredients
  • 1 lb bag long grain wild rice
  • 1 lb sausage ( I use andouille for an extra kick)
  • 4 chicken breasts, cooked and diced
  • 8 oz can of tomato sauce
  • 10.5 oz can of beef bouillon soup
  • 10.5 oz can of french onion soup
  • 1 stick of butter, cut into tablespoons
  • 1 1/4 cup green bell peppers, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup green onions, chopped
  • Your favorite Cajun Seasoning....I like Zataran's
  • Dash of tabasco (optional, to taste)
  • Cayenne pepper (optional, to taste)

Directions
  1. Mix all ingredients together (except for Cajun seasoning) in 2-guart greased casserole dish.
  2. Sprinkle Cajun seasoning on top, be generous
  3. Bake at 350 for 1.5 hours covered.
  4. Stir every 15 mins.
  5. *You can substitute shrimp for either the chicken or sausage.
