Ingredients
  • 2 pounds unpeeled russet potatoes, scrubbed, cut lengthwise into 1/2-inch thick sticks
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons coriander seeds, cracked
  • 1 teaspoon dried thyme
  • kosher salt

Directions
  1. Preheat oven to 450F degrees.
  2. Spray large rimmed baking sheet with nonstick spray.
  3. Toss potatoes with olive oil, coriander seeds and
  4. thyme in large bowl.
  5. Transfer to prepared sheet and spread in single
  6. layer.
  7. Sprinkle with salt and pepper.
  8. Place in top third of oven and bake until golden, occasionally turning
  9. with spatula (about 40 minutes).
  10. Season to taste with kosher salt andserve.
