Better Than The Delis Turkey Breast Recipe
turkey breast is the leanest part of the bird. The pressure cooker keeps the moisture intact. a few years ago Whole Foods was selling sliced turkey breast for 8 or 9 dollars a pound, and I went home and made mine!

Ingredients
  • Buy turkey breast close to 2.6 lbs.
  • Remove skin and most of fat globules.
  • Wash and pat dry .
  • Brown in a bit of olive oil in bottom of pressure cooker. If breast won't lay flat, you can broil. I think I have set the oven to 475 or 500 F and browned the breast that way and flipped it over once.
  • While meat is browning, assemble the veggies:
  • 2 carrots
  • 3 celery stalks w/ leaves
  • 1 or 1 1/2 cups tomatoes (winter time I use Pomo chopped tomatoes)
  • .5 tsp. thyme
  • a big pinch rosemary
  • .5 tsp. sage
  • 1 Table. paprika
  • 1 cup of Spicy V8 or chicken broth or combo

Directions
  1. After browning the breast, and breast is in the cooker,
  2. throw in the fresh vegetables
  3. sprinkle while rubbing the herbs in your hands, on top of the breast.
  4. Add all the wet stuff: spicy v8 , the tomatoes , maybe chicken broth, maybe water. Just make sure you are meeting the liquid requirements of your pressure cooker.
  5. Close the lid, and wait until the pressure is high enough to Rock the Regulator.
  6. Time starts when regulator is rocking continuously. After 18 mins.
  7. Remove from heat. When pressure has dropped, and lid can be opened,
  8. Wrap your deli style turkey breast tightly in saran and refrigerate.
  9. Enjoy!

Hello...
I really like this recipe...especially the use of
'Spicy V/8 Juice'...however, I do not have a
pressure cooker..would you advise me on what I can use instead, just a different way to cook the turkey breast?

I am really not sure how to replace. kfc uses the pressurized cooking method in their chix. albeit dripping in fat!

I love my pressure cooker. Paid $100. about 20 yrs ago at Macy's. Watch for a sale. My T-Fal brand is stainless steel. Excellent quality.
The thick bottom is great for making soups using top of stove heat, not pressurecooking. My husband just used it to fry his self-caught fish!

Hopefully some one else can advise you. I'm clueless!!
