Ingredients
  • Pastry for 1 pie shell
  • 3 large eggs
  • 3/4 cup sugar
  • 1 cup dark or light corn syrup
  • 3 tbs butter, melted and cooled
  • 1 shot good quality bourbon (2 tbs)
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 2/3 cup chopped bittersweet chocolate bar or semi-sweet chocolate chips
  • 1 1/2 cup pecan halves
  • Bourbon whipped cream, optional

Directions
  1. Prepare pie shell; set aside. Beat eggs in a large mixing bowl. Beat in sugar, corn syrup, butter, bourbon, vanilla and salt, mixing well. Fold in chocolate and pecans. Pour mixture into prepared shell.
  2. Bake in a 350ยบ oven for 40-45 minutes or until center is set. Transfer to cooling rack; cool completely. Serve at room temperature with Bourbon whipped cream, if desired.
  3. Bourbon Whipped Cream:
  4. Beat 1/2 cup whipping cream with 2 tbs powdered sugar until stiff peaks form. Beat in 1 tbs good quality bourbon. Makes about a cup.
