How to make it

  • In a large bowl, cream butter, brown sugar and pudding mix. Add egg. Combine flour, ginger, baking soda and cinnamon; gradually add to the creamed mixture. Cover and refrigerate overnight.
  • On a lightly floured surface, roll out to 1/8" thick. Cut with a 5" gingerbread man cutter. Place 1" apart on ungreased baking sheets. Bake at 350* for 8-10 minutes or until edges are golden. Remove to wire racks to cool.
  • To decorate: Combine powdered sugar and milk until smooth. Frost and decorate cookies with candies and raisins.

    Oh WOW! These are great! I ALWAYS make gingerbread men for xmas and thought I would try this recipe instead of my usual. They went down a treat! I've uploaded a photo. (Sadly ginger-bread man cutter has vanished, so had to make do with trees/stars/snowmen).
    - just a tip when icing is to add choc drops for eyes etc AS SOON as the biscuits come out of the oven. That way they melt slightly and stick on- which is much easier then sticking them with icing :)
