Salmon Zucchini Wedges

- 1/2 Pound zucchini,shredded(1-2/3 cup) shopping list
- 1/4 Cup finely chopped onion shopping list
- 3 eggs ,well beaten shopping list
- 1/2 Cup parmesan cheese,grated shopping list
- 1 Tablespoon lemon juice shopping list
- 1/4 Cup fresh parsley,snipped shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon Dried Dillweed shopping list
- Dash of pepper shopping list
- 1(8oz) Can (Good) red salmon,drained,flaked,and cartilage removed shopping list
How to make it
- In a saucepan,combine zucchini and onion,add water to cover.
- Bring to boil,reduce heat and simmer,covered just till tender,about 3 minutes.
- Drain very well,pressing out excess liquid.
- Combine eggs,cheese,and lemon juice.
- Stir in zucchini and oiion,parsley,salt,dillweed,and pepper.
- Fold in salmon.
- Turn into ungreased 8"pie plate.
- Bake in a 350 degree oven till set 25 to 28 minutes.
- Cut in wedges.
