Greek Style Farro Salad

- 10 ounces farro - about 1 1/2 cups shopping list
- 1 1/2 tsp kosher salt plus 1/2 tsp salt shopping list
- 1/2 cup pitted green olives (can sub Greek olives - yummy) shopping list
- 1 medium red pepper, cut into chunks (about 1 cup) shopping list
- 1/2 english cucumber, sliced 1/4" and quartered shopping list
- Several tomatoes, cut in half and then sliced shopping list
- 1 avocado, diced shopping list
- 1 red onion, sliced in half and then cut in half and then on the diagonal shopping list
- capers to taste shopping list
- feta cheese to taste shopping list
- 1 lemon shopping list
- olive oil shopping list
- salt and pepper to taste shopping list
- fresh basil torn into small pieces shopping list
How to make it
- In medium saucepan, combine 4 cups of water with the farro. Boil, cover and simmer over medium-low heat about 20 minutes.
- Add 1 1/2 tsp salt and simmer until the farro is tender - about another 10 minutes.
- Drain well and transfer to a large bowl and let cool.
- Once the farro has cooled add the green olives, red pepper, tomato, cucumber, avocado, torn basil and onion. Stir gently to combine.
- Squeeze a fresh lemon over top and a little olive oil.
- Pour over salad. Toss to combine and serve. Crumble feta on top and add the capers on top.
