How to make it

  • In medium saucepan, combine 4 cups of water with the farro. Boil, cover and simmer over medium-low heat about 20 minutes.
  • Add 1 1/2 tsp salt and simmer until the farro is tender - about another 10 minutes.
  • Drain well and transfer to a large bowl and let cool.
  • Once the farro has cooled add the green olives, red pepper, tomato, cucumber, avocado, torn basil and onion. Stir gently to combine.
  • Squeeze a fresh lemon over top and a little olive oil.
  • Pour over salad. Toss to combine and serve. Crumble feta on top and add the capers on top.

    Not sure if I have ever seen farro in the market is it available in health food stores? The salad looks delicious!
